Whether it’s just a group of friends, special occasion or corporate event, people love learning about making better barbecue. During a two-hour lesson at your location, Levi will share his passion for great barbecue with your group, helping them enjoy making improvements no matter their barbecuing experience or equipment. Lessons start at $400 and can be customized depending on location, equipment and number of attendees.

Each two-hour lesson is tailored to attendees, equipment and experience, but typically includes:

  • Pit/smoker selection
  • Wood selection
  • Meat selection
  • Starting and maintaining a fire
  • Brisket trimming and rub application
  • Time and temperature
  • When to pull it off, how to let it rest and how to slice it
  • How to translate barbecuing brisket to other cuts of meat.

  • We offer private lessons in the Austin area for $50/person. The minimum lesson charge is $400 and includes up to 8 attendees.
  • Lessons are done by Levi Smith, Owner & Pitmaster. Lessons typically last 1.5-2 hrs, but duration and content can be customized for your event.
  • Levi will travel outside Austin for lessons, but only if you fly him first class and the destination is interesting 🙂
  • On the day of the lesson, hosts typically provide the pit/smoker, wood, a raw brisket (we’ll email you prior to the lesson with recommendations on what and where to purchase) and kitchen space to prepare the brisket. We’ll bring dry rub and know how, leaving you with a trimmed and seasoned brisket ready to smoke or freeze after the lesson. If you prefer, for an additional charge we can bring our trailer smoker ($40), wood ($10) and a raw demo brisket ($40).
  • Add a brisket to your order, which you can prepare onsite the day of the lesson. Levi will slice it up at the beginning of the lesson to demonstrate slicing techniques and give everyone a taste.
  • We recommend use of a smoker temperature monitor. If you do not own one, consider purchasing one prior to the lesson.
