  • Will you make this easy for me, get the details right and ship on time? Yes, yes and yes. I’ve been in your shoes and quite simply, we’re committed to delighting you and your clients.
  • What forms of payment do you accept? Credit cards.
  • Why does a brisket not absorb smoke after about 8 hours on a pit? After 6-8 hours (depending on the temperature a brisket is cooked at), it begins expelling moisture, rather than drawing moist, smokey air in. During the last few hours, a brisket only needs consistent heat, not smoke, to finish.
  • Will the recipient need to do anything besides put the thawed brisket on a broiler pan in a hot oven? No. We recommend finishing the brisket at 245 degrees, with adjustments as needed for particular ovens or altitude. They will not need to baste or do anything else. While the instructions that come with their brisket will include an estimated cook time, we recommend use of a food thermometer or temperature probe to pull the brisket out at the optimum finishing temperature of 195. We can add either to your orders if you’d like for a nominal charge.
  • Is your rub overly peppery, spicy or salty? No. Our rub has a nice balanced flavor.
  • Why do you only ship on Tuesdays? So we can have a life… and to be sure briskets do not sit in trucks or warehouses over the weekend.

Each brisket feeds 25 people with typical sides. Cost is $129/ea + tax & shipping.

1 – If you only need to order a few briskets, the easiest process is to complete one or more separate orders on our ordering page. Reply to the order confirmation email to let us know it is a gift and include any special instructions or line to add to the enclosed card.

2 – If you need to order multiple briskets, download and complete our Woodpile Client Gift Sheet, which includes the information we need to put your order together. Email us the sheet when you’re done. We will contact you to confirm the information, provide a shipping total and collect payment. If you would like a note included with each order, we will coordinate getting those from you to go out with the shipments.

3 – Let us work our magic. Practice saying, “You’re welcome” graciously. You’ll be doing it a lot.

  • Each vacuum packed brisket is packed in an insulated shipping box with dry ice or frozen gel packs. Briskets will arrive frozen or partially thawed.
  • Every brisket includes a professional tri-fold brochure with instructions for final preparation and slicing. Briskets will need to be thawed 48-72 hours and then cooked in the oven for a few hours on a broiler pan. That’s it. Because a brisket does not absorb smoke after about 8 hours on the pit, an oven works perfectly to finish up the last few hours of cooking.
  • If you included notes for us to send out with each shipment, recipients will find those at the top of the box. If you requested a line for us to include, they will see that when they open the Woodpile tri-fold that includes the preparation and slicing instructions.

  • We ship briskets on Tuesday and will work with you to determine ship date based on desired week of delivery.
  • Orders will arrive by Friday the week of shipment via FedEx.
  • You and/or recipients will receive an email with tracking information upon shipment.
  • Shipping charges are typically $30 per box outside of Texas. Shipping charges inside Texas are $20.
  • Tax is only charged for shipments within Texas.
